The performance you can get for a CPU at just over a hundred quid these days is amazing. These 2600/2600x Ryzens blow my old overclocked i7 out of the water.
How much of an upgrade is this compared with r5 1600?

It's not worth it, I'd only go to the 3600 from the 1600.

In gaming I would say no, in video editing you may benefit a lot depending software you use. Some video editing tasks prefer clocks speed over threads count and vice versa.

thats a bit of a side-step upgrade. Much better going for a higher spec as what you have is still fairly decent

Yes it still seems okay although it would be nice to have the extra cores for my video and design work. I wouldn't have to put much money towards a new motherboard and processor if I sold my current ones. Might save up for a better one like you say if it won't be a massive difference.
