Worth noting. But I would argue no-one should be overclocking mid-range and up Ryzen 2xxx or 3xxx CPUs anyway as there's really not that much perf to be gained and you're quickly getting into difficult cooling situations.

Ryzen 7 2700 is older but 8 core 16 thread, the Ryzen 5 3600 is newer has better IPC (instructions per cycle/clock, the average number of instructions executed for each clock cycle) performance, but is 6 core 12 thread.

Depends wht you are using it for if it is a cpu intensive program that uses all 8 core the 2700 is the best bet but if you are just gaming the 3600 is stronger because of zen 2

Currently have my 2700 with a rx 580 plan to upgrade it in the future because my cpu is usually at 40 percent but I got a great deal on it

Why would you need to upgrade if you're only using 40%?
Service from them is pure joke ... They scanned me on Ryzen 5 3600 CPU - left with no refund at all ... !!!! Stay away from them . :((((((
