Yes it will just have odd features missing. Incidentally I’ve a series 2 watch which is still serving me very well on the latest 5.3.1 and it will also get OS 6 when it drops. Apple support is second to none

I don’t know why the 42mm black is expensive? I got the 42mm white last month from amazon France for £217.
Why the different sizes? Thinking of one for the teenage daughter so which size 38mm, 42mm etc. would be best?

All depends on wrist size. My wife has small wrists but is still fine with the 42mm. They come with a small and a normal strap so unless she has a really tiny wrist I’d personally go for the 42mm. The more display area the better and they have a slightly larger battery which means more screen time.
