The recipe I use

1 teaspoon of plain flour
1 teasooon of dried oregano
½ teaspoon of dried italian herbs
½ teaspoon of garlic powder
½ teaspoon of onion powder
¼ teaspoon of cayenne pepper
1 teaspoon of salt
½ teaspoon black pepper
500grams/1.1 lbs of lamb mince, as fatty or as lean as you like (but fatty works best)

Knead until smooth into a loaf and chuck it in the oven.

the basic mix is lamb meat(mince) crushed/minced garlic, chili and cumin, then the commercial stuff is put thru some sort of compression to get the air out and help binding, this occurs better with high fat meat.

I recently bought some vegan doner meat and from what I remember of eating doner kebabs some 25+ years ago, the vegan one tasted better.

It's less disgusting than what the actual sheep herders eat... All the organs and offal, wrapped up with the sheep's intestines!

I say disgusting, but probably nicer to have discernable parts of the animal on a stick...

I would have hoped some lamb chest and shoulders are chucked in, but it must be bulked up with the mechanically reclaimed meat sludge, that they hose off the bones...
