This Extra Dry Prosecco Treviso from Massotina is produced with Glera grapes from vineyards in the province of Treviso, northeast Italy. Massotina is a family-owned winery that has been in the Dal Bianco Family since 1946. Today Federico and Filippo continue to produce quality Prosecco for which their family is known. They use the Charmat method, and the vines are Guyot-trained, planted in clay and morainic soils. WINEMAKING NOTES The wine is made using the Charmat method. The first fermentation takes place with selected yeasts, and lasts for around 15/20 days at a maximum temperature of 18C, which preserves the delicate aromas of the grapes. The wine is then racked and filtered before secondary fermentation, which lasts over 30 days. Towards the end of the secondary fermentation, the temperature is lowered to stop fermentation, leaving enough residual sugar (12g/l) to guarantee balance and harmony.
