Would these work on plastic? If not what do you recommend?
Best spade bit there is , not that expensive for a set. Can't resharpen due to the shape. I'd recommend these to anyone.
I've got these. I don't have a reference to other brands but they're brutal with wood!

What's a good set for doing locks work please? Got a few cheap internal doors to install, but maybe worth buying good quality bits to avoid stress and wasted hours ?

I much prefer auger bits for fine work. Got an old set of Fisch that work well. They are very expensive for just occasional use, I'd go with Erbauer instead

You could use a step bit, like this one (doesn’t have to be that one).

Go cautiously if you use a step bit. Its very easy to make the hole too big, especially when using a fast drill in soft material!
I thought these were darts from the picture at first glance
The extension is handy for one off jobs too, you wouldn't want to do too many but I'd rather have it than not...
There's also a much bigger set different sizes available if you want a slightly different hole size...

Agreed, they are good for putting a hole in quickly but it does tend to tear through the wood. The problem is that the screw part on the tip is very aggressive and pulls forward. However, they are fine for joists or unseen areas.

That screw part is part of the design, not really a problem. If you are used to non-screw spade bits and get these, I'd recommend trying them first on a scrap piece of wood so you can get a feel of how different, i.e. aggressive, quick cutting, they are.
