A friend of mine has both brands ( assuming you're referring to the mx3's). Both had software issues when updating to the recent software, but that was a few weeks back.

I preferred the Sony model for fit.

Everyone has different ear sensitivities. With that, sound can be different for everyone. One person's opinion will always be different to the next

That being said, can anyone recommend me in the direction of in ears? Not airports or out like that - cheap tat dressed up as premium.

Totally agree... It's Bose anc and fit for me. Sony's just seem so awkward on my head.

Not sure if you're thinking noise cancellation for in ears, but I'm loving my Cambridge audio melomanias. Currently belting out trance for a gym session, but have dealt with anything I've thrown at them over past 3 months.

Like any in ear they lack some depth, but they're loud enough (just!) bassy and great battery life.

Only criticism can be that sometime Bluetooth can be a bit lossy. Adjusting phone in pocket sorts that out though.

I recently bought Taotronics Liberty 53 TWS with some decent ear buds fitted I am amazed at the sound very close to my Grado 325 headphones.

Just FYI, I bought a pair of QC35’s just over 2 years ago. £285.00. Just recently they began to switch themselves on randomly thus draining the battery. Called Bose and they offered to sell me a new pair! When I asked if they had a repair service they said no because the headphones were too complex to repair. So zero customer service. I’d think twice before buying from Bose again.
These can connect to two Bluetooth devices at once (link); I think the Sony 1000XM3 can only accept one connection at a time.
