This is probably a £1 or so cheaper per kg I guess??

Disappointing those cheap pork offers in Morrisons recently.. They used to be mostly meat but now contain at least 1/3 fat (they acrually add fat in the pack, as if there wasn't enough already).

That is to help it cook better

no they don't ADD fat to the pack!

Its 2.99 a kilo in Tesco in case you aren't near a Morrisons.

I have never seen fat added to any pork & fat content tends to depend on the cut of meat you buy.

Generally "basting fat" in only usually added to the leaner (cheaper) joints of beef like silverside to improve the flavour

Shoulder pork does have more fat and sinew than say loin or leg.I buy this with the stuffing in(usually about 20p a kilo more),but for some reason tends to be nicer.I try and get a piece about 1.5kg and cook it for about 2 hours,its usually very tender with crispy crackling.

Remember fat= flavour.Always cook meat with fat,you don't have to eat the fat.

The Jamie Oliver recipe for slow roasted shoulder of pork is absolutely delicious. It's so tender, you can practically drink it. Having it on Friday...

The amount of fat you get depends on the animal and the how the butcher has prepared it, some leave a little more on than others. There are some joints where they may be rolled with a layer of fat, but not always - the meat will be fry and tough otherwise when roasted - The shoulders have no need for any extra as they have enough already

Slow pot roast this for a few hours will get a great meal, removing the fat for the last hour - cooking that separately for nice crackling.
