    cheap knives are fine if you keep them sharp, and with cheap knives you have no problems using the more aggressive sharpeners that will pretty mcuh put a new edge on them whenever you need to

    Currently you have good quality knives that are blunt, so cheap knives sharpened on a pull through sharpener will trump your quality knives as a work tool. If you have concerns about sharpening, why not buy this junk knife to practice on? It has the same double Bevel and it will give you confidence. As to how you sharpen your knives, if you don't want to learn how to using whetstones, you could opt for the likes of the highly rated Work Sharp guided system at £70 off eBay. (edited)
