Fine if they were also NiMH. Might ruin the battery if the phone used to use NiCad

The previous batteries will have been 1.2v the only difference is the higher capacity.

Yes perfectly fine, they will improve talk and standby time due to the higher capacity. Voltage will remain the same at 1.2v so no issues. Assuming the phone is less than 15 years old it is unlikely the previous batteries where nicad.

It's better to use lower capacity ones for phones, they get more recharge cycles.
Additional, I'm not a fan of the higher capacity EBL cells i.e. the 1100mAh AAA and 2800mAh AA they seem to have poor reviews and a high failure rate. The older EBL 800mAh AAA and 2300mAh AA cells are excellent though.
