Does the PS4 support variable/high refresh rates? Also, does it support ultra-wide resolutions? I'd be surprised if it does either.

It doesn't. Unfortunately but the monitor will increase performance where it can. There will be a difference.
I have one of these and am very happy with it... I paid just over 400 for mine and have no regrets... Heat from me...

No, there won't. If the PS4 does not support it, then the image coming out of the PS is stuck at a specific refresh rate. The monitor will need to lock to that, if it does not, then it will cause stuttering.
For the resolution, if it only does 16:9 then it would be stuck to that too, and if you fill the ultra wide disply you're either cutting some of the picture off, or stretching it somehow, either way, distorting the pic.

He was only talking about improving response time, not aspect ratio or refresh rate. He'd still probably see improvements there, right?

How log have you had this monitor for? I have been thinking of getting it for my new setup as i don't want to be selling a kidney to get one of the £700+ varients.

yes, he would, but it would be a complete waste to buy this display for a PS4. Some (maybe all?) Xbox One consoles have Freesync, so that would make more sense.
For the PS4 it'd be much better to buy a decent spec 1080p display.
