Any advice on this from a veteran?

Sorry no I’ve not got the game but seen a few videos on YouTube and looks good, I’ll probably get it during this sale as it’s been in my wish list for too long
If you enjoy it you’ll want the DLC. In fact you will feel you can’t do without it. And then you will spend about £50 on the add ons. So, think of it as a cheap introduction to what might turn out to be a less cheap obsession. I don’t regret the amount I’ve spent, I’ve probably played for 2000 hours but it’s more than a few quid.

Wouldn't recommend it without at least some of the DLC, which costs an absolute fortune. If you can hold on there might be another bundle or a gold edition or something that works out better value.

Thank you for letting me know that, I’ll certainly get one with DLC which they’ve also got a sale on for at minute on a DLC bundle

No problem. About half the DLC is just cosmetic so you'll want to make sure you get the expansions, not content packs. There's a lot of them though even at half price.
Personally although the base game needs the added features, I think the total is expensive for what they add and some of the features should have been in the base game.
Excellent game, I've played EU2 (spent months on it) and EU3; EU4 got a bit complex, but the basics are still the same. When you're bored a bit with provided campaigns, choose less "popular" country like Finland, Vietnam or Pomerania and edit/change the capital city parameters to max (population, taxes, buildings etc.), and try to conquer the World, "rewrite the history...". All fun.
You can literally get an Empire Founder pack Steam Key with the Major (Expensive) DLC missing for £15 just by merely typing it in on google but nah everyone loves a steam "sale" on UKHotdeals don't they and pay a stupid fee instead

Is this lot more content packs rather than expansions I’m guessing?

Includes additional DLC:
- Horsemen of the Crescent Unit Pack
- Star and Crescent DLC
- Conquest of Constantinople Music pack
- American Dream
- The 100 Years War Unit Pack
- The Purple Phoenix Expansion

Pretty much. I think that's all the digital extreme version content.
The music pack is literally just in game music.
Unit packs add 'skins' for troops so they look a bit more unique for the included countries but functionally no different.
The others are 'event' packs. They don't really add any features to the gameplay just new event pop-ups with one-off consequences. The extra variety might be nice but they're often so random you could play several games and never see all of them.

This might give a good idea of the proper expansion names and what they contain so you could have an idea what might interest you;
