I dice up a whole pineapple after removing the core, put it all in a casserole dish with a tiny amount of sugar #30g (personally I actually use Canderel Sugarly as we're on a low sugar diet at the moment) then i make up the crumble mix with Sugarly or Golden Granulated sugar and pop it straight on top of the raw pineapple and shove it in the oven for 30-40 minutes until it is golden and crisp on top.
Serve with your choice of cream/custard or ice cream

Butter (Or I use Bertolli Light)
Plain White Flour
Sugar or Canderel

Depends on the size of the pineapple and size of the dish as to how much to use but generally equal parts flour and butter then half the amount for the sugar or sweetener. I think I use about 300g/300g/150g for my medium sized pyrex dish. Obviously sweetener weighs less than sugar and Canderel Sugarly is twice as sweet as sugar so I would half the 150g for sweetener, using 75g ish!

​I wouldn't trust any sweeter except Stevia. .rest have too many problems...you would be safer using sugar.

​sucralose, saccharin, and other artificial sweeteners are no better than sugar in the metabolic problems and long term side effects they can cause in the body. Stevia is a natural plant many times sweeter than sugar and is generally regarded as safe ( GRAS).
sugar itself is metabolised by the body like alcohol and leads to similar problems like fatty liver etc. .. it's the fructose that's the problem not glucose. That doesn't mean we can gorge on glucose as it raises insulin levels as which has can elevate triglycerides and cholesterol and the deposition of fat as storage in cells.
