I'm sorry BUT ( and please will all the chemists/ scientists correct me if I'm wrong) but FERMENTED garlic...... Is that not what you get if you bury NORMAL garlic in the garden and dig it up 3 weeks later???!!!

If you leave garlic for 3 weeks in the ground, it's only going to sprout and grow a green stem, not turn black. I wonder how they achieve that.

What an odd little website though... You can get free samples but there's no way to order the advertised products! I understand it's in construction but surely if they're giving samples away, they must be expecting some of us to order more afterwards? The phone number in the contact page is a mobile one...

Let's see what we get, but I'll definitely give that a try. I suppose it's a natural process, garlic is usually rich in starch that here transforms gradually in sugar, that's technically possible. Anyway, let's not break the magic...

I doubt we'll receive anything though, I can't see someone importing and running their business from a mobile phone post away the thousands of samples for requests that HUKD and the like will most likely generate.

Given that most of the natural wonder-super-anti-oxidant mega-greatness of garlic is lost during the cooking process, it would be interesting to see if this truly is more edible in it's raw form.

Black Garlic will be able to purchase online by 20th February 2009 - but do keep checking the site as this is the latest possible date.
