Totally agree, if you are looking at moving from a smartphone and want to get serious, then a viewfinder is a necessity, I would go for the Olympus over this.

Or the Fujifilm X-T200 - pretty much the same camera but with a view finder

Which Olympus ? Currently my shortlist is this vs x-t200, eos m200, Sony A6400, A6100. Are there any obvious good cameras I’m missing ?

Yes, Fuji are a good brand, not sure why manufacturers of cameras, especially when they are trying to snatch smartphone camera users omit a viewfinder, to me it is like doing away with shutter or aperture priority on a camera, so many times when I am out in the sun with my smartphone I have difficulty framing a proper shot, why would I want to buy a camera that gives me the same problem?

I would add Panasonic LUMIX DC-GX9KEB, a good second hand Fuji T2 is a good option. I really love the images from Fuji and the menu system is really good especially coming from Nikon. That said try out as many as you can as how a camera feels to you is equally important.

Whittled it down to x-t200 (would have to possibly buy imported for my budget) x30 (surprisingly cheap on eBay used). I had a look at the but Panasonic but it’s not aps-c, but I’m not sure if that would make a huge difference in my budget range?

The last mirrorless camera I had was the Samsung Nx1000. Still miss their cameras, for eg the Nx500 that was released in 2015 still has amazing specs considering it’s 4 years old.

Don't let refurb put you off as I have found them as good as new, 12 month UK warranty.

It's the smaller, more travel friendly (and affordable) cameras that don't have viewfinders. Plenty of options with a viewfinder but you'll be paying more. Imo makes sense.

Its 100 notes cheaper and you get a viewfinder, are the extra pixels really a necessity?

The Olympus is also a smaller sensor, this is much better value for money IMO

I think it is as someone else on this thread said, it is what ever you feel comfortable with. For me I would want a viewfinder, others have different priorities, perhaps it is because I come from an era of Single lens reflex cameras, someone who has never used a proper SLR would no doubt be happy without putting the camera to the eye and being able to see the settings as well as framing the shot. If sensor size is the main consideration then a full frame camera might be the answer. Horses for courses I guess

Disagree, I am a photography enthusiast and have a number of cameras. There isn't a right or wrong way to make a photo. Why would you say it's "serious" to use a viewfinder?

Did I say there was a right or wrong way to make a photo?, I did say that in Bright sunlight a viewfinder was a requirement in my opinion.

I think the comment about the viewfinder was an opinion, Perhaps, just perhaps this person has tried to take photographs on a bright sunny day and has found it difficult because he or she could not see the screen and with a viewfinder this would not have been a problem, its a thought you know?
