I enjoyed a beautifully sweet pineapple the other day but as soon as it was in the fridge overnight it became very bitter, is that normal ?

Possibly because it was too cold and you could not taste the natural sweetness...best to take it out of fridge 60-90 minutes before eating. Also make sure it is in an airtight container.

Cut them, then place them in salt water. Makes them taste even sweeter.
