The go pro has a fixed wide angle lens with fixed focus, so you'll have to live with that, but for the intended usage scenario, it's usually fine. The lenses are good and sharp, too. There are some different modes that approximate different lenses but they are basically just tricks where different sized areas of the sensor is samples.
Phones have the advantage that most recent high end ones have multiple lenses so you can have a decent telephoto and a wide angle besides the standard one. I find that on most phones, though, that the additional camera module never have sensors as good as the main module so may have more noise, lower frame rates, inferior detail etc.
For pure video quality, though, I would hand it to the gopro.
The 5.3k mode is absent in most phones. A few can do 8k but not with the same kind of bitrates or at 60fps.
You can either keep footage at 5.3k or downsample it to 4k to make footage that is much sharper at the pixel level than any 4k video from a phone camera is likely to be
The gopro can also do 4k at 120fps for amazing slo mo footage without sacrificing resolution. Of the small handfull of phones I've seen that claim to do this, the image quality is nowhere near as good normal 4k, as more compromises are being made to achieve it. With the gopro, the 4k120fps footage looks pretty much the same as 4k60 or 4k30
The Gopro also records at a higher bitrate than most phones up to 120mbps from the box and using gopro labs custom settings you can up it to 200. Even that isn't considered that high in the scheme of things, but it's better than a lot of phones that average closer to 50 and can have more obvious compression artifacts. (it's worth mentioning that some 3rd party phone apps allow you to use much higher bitrates than stock)
The gopro also records at a constant framerate whereas many phones still use variable framerate as a means to save storage space and an extra way to control exposure. It's considered non-standard and can be frustrating to work with as sometimes videos have juddering or uneven motion and some video editing software doesn't like it, either.
The hypersmooth stabilisation is pretty much unmatched by any phone or even any other action camera. I've seen a few phones that come close to matching the smoothness but at a huge cost to resolution (pixel 6 and 7 for example) The gopro can perform absolutely amazing stabilisation whilst still delivering very high quality footage. It really is the best I've ever used, even better than using a dedicated gimbal because it can dampen out movement from walking, too. The horizon levelling ability is unbeaten, too.
When it comes to photos, for pure quality, I would probably hand it to the very best smartphones now that they use computational photography to do stuff like combine 4 photos into one to reduce noise and increase detail. Having said that, the gopro has a great amount of manual control and it's more accessible so there's some things you can easily do with a gopro photography wise that are difficult or impossible because the phone doesn't want to hand over the reigns. The gopro is a little more like a mini DSLR camera in this area, because you can manually take control of many things and lock settings etc. The pixel 6/7, latest few Galaxies and iphones etc have immense image quality but the manual modes tend to be less intuitive or come at the cost of losing some of the clever image processing. My Pixel 6 is maddening in terms of how limited the manual controls are, knowing how capable it is of such good quality on a technical level.
You'll probably also find features like time-lapse are more comprehensive and customisable on the gopro vs most phones.
Anyway, really blathering on now!
But in terms of outright video quality, I have to hand it to the gopro. Phones have their own advantages, too, though. (edited)
You are loosing floaty handle, strap and clip but gaining one extra battery (3 in total) and dual charger.

There's a ton of them on Amazon, but many seem incompatible with the media mod. The official website only sells one and says it's only for the GoPro 8 Black.
Probably for when I'm out cycling on my road bike, recording clips of journey, and for use as evidence is the worst was to happen. Also for walking and general videos of my daughters.
Are they as good as they appear... Or as bad as the reviews make out?
