Had a look through the Target website after @thepointyend's deal. Good deal as you don't have to buy the $10 card.

This is a US digital download. Pay via PayPal using a fee free card.

To redeem the game change region to US and redeem the code. Then change back to UK. Don’t switch region if you have credit on your UK account as you will lose it when switching.

Hi, can someone help me with this changing of regions? Does the game stay available to all users once you change back to the UK? I already have a Russian and South Africa account on my Switch, and no room for anymore!

Create another profile on your switch, then go to the Nintendo US website and create a new US account (using a different email address to your UK account). Link the account to the profile you just created on your switch and you're done. It's exactly what you did when you set up your UK account, but just for the US. Now when you go to the eshop on your switch, use the new profile linked to the US account and it will automatically take you to the US eshop where you can redeem the code. Your normal UK account will be completely unaffected.

I normally pay direct from my bank rather than paypal, would i still be able to do that with the US account and use the same bank account linked to my uk switch account?

I think your best option - at least it's what I do - is to buy US store credits. For example PC Game Supply will sell you a $20 store credit for £15.84. You can use your normal bank card but you might want to check what your fees are like for international transactions first.
I used a fee free card directly, but had to pay tax. Worked out at around £7 in the end
