The Sony XF90 for sure, even the 1000 nits claimed by Hisense seems to be quite inaccurate and would be up to 400 nits most of the time.
If you have the budget for either or, then Sony would win.
The other strong candidate to Sony is the Samsung Q70, exact same price point at the moment, I personally went for the Sony.
The U8B is in no way a bad TV for sure by the way, it's a very decent TV at a great price point, this comment is only addressing the difference between it and the other options.

The Sony XF90 for sure, even the 1000 nits claimed by Hisense seems to be quite inaccurate and would be up to 400 nits most of the time.
If you have the budget for either or, then Sony would win.
The other strong candidate to Sony is the Samsung Q70, exact same price point at the moment, I personally went for the Sony.
The U8B is in no way a bad TV for sure by the way, it's a very decent TV at a great price point, this comment is only addressing the difference between it and the other options.

I'm erring more towards the hisense b7500 or the u8b. But seems a relatively large leap on price for the Sony unless I've seen the wrong one. Almost seems it's in a different class to the aforementioned two.

Indeed it is, the Sony one is in a different class, it's nearly their top class before the XG95 then their OLEDs, the current price of £780 with 6 years warranty seems to be the best for it so far, but if you're not willing to stretch the budget this much, the U8B is a great TV with a lot of positive reviews.

Thanks this is a TV for a basement cinema style room. Don't want to spend loads as the TV may not even get much use... Who knows haha. What's your view on the 7500 Vs u8b... Worth the extra 100£…?

The U8B is surely a leap from the 7500 and definitely well worth the £100 difference, the native 120 Herts panel alone is worth the difference and they handle motion quite well on the U8B, it's their best TV in the 55 inch range before their OLED, and I think it is on a great price point and surely the lowest it has ever been.

I think the U8B at £499 is the best this price can get. There are the Philips options, particularly the 58 inch of 7304 one as it has a va panel and the marvelous Ambilight, however the panel is 60 Hz and the colours according to reviews on the U8B look better. There is also the 55 inch of the 8 series of Philips for better sound and wide colour gamut, but with some cash back hassle to get it to this price.
Prices can go up again later, I don't think they would get much lower than what they do now, unless you wait for the 2020 models to be released, which will make the 2019 models harder to find. It's up to you of course, but I would recommend getting a good bargain if you have the budget for it atm.

Warranty was decider for me - wanted at least 2 years if spending around 499. Hence went with Hisense.
Anyone had luck finding stock on this? Rather go with richer sounds due to the additional warranty
I'm really not massively up to date with TV tech, I play games on the PC so I do know how important a higher refresh rate can be and the difference it can make.

I gather this TV doesn't support HDR 10+ though, just what would I be missing out on here? Stuck trying to decide between this or one of the 60hz ambilights that do HDR 10+.

As far as HDR 10+ goes you're missing out on metadata and at the same time nothing. HDR 10 has to deliver all the information about an entire movie's dynamic range statically for the whole disk. HDR 10+ extends this by being able to update this information scene by scene. Which should mean better color and brightness levels but... There are two competing formats that can do this HDR 10+ and Dolby Vision which this Hisense TV supports. And Dolby Vision is arguably better supported at the moment.
Might want to consider Q60R on Richer Sounds (£659 for 55inch). My preference is XBOX gaming.
