Or is because the screen is not IPS?
Any of these laptops mentioned come with IPS screen ?

I’m not sure why ips makes such a big difference but it’s the first thing everyone mentions

Would you really notice much difference in any of these three if you were just using them for word processing, social media, internet browsing etc? Would the cheaper Lenovo be more than suitable for this type of work?

No. All my old laptops, given the price, would have neen TN, my desktop monitor is TN, and from reviews I recently discovered not a very good TN monitor, but this is not a problem. I do photo editing on them. Its ok for my eyes. Viewing angles, well how often do you look at the screen from anywhere than straight on? If someone else is viewing it, they can move or the laptop can move. Without seeing a TN and IPS screen side by side, I think Im happy with the cheaper option.
