Whilst browsing pascal gaming laptops I actually came across this which when combined with the current 15% off makes it one the best priced gaming laptops for the spec

Windows 10 Home 64
Intel® Core™ i7-6700HQ Quad-Core processor
43.9 cm (17.3") diagonal Full-HD (1920 x 1080) display with G-SYNC™
8GB RAM memory with 128GB SSD and 1TB storage
NVIDIA® GeForce® GTX 1060 (6 GB GDDR5 dedicated)

No doubt get voted cold because its HP but presently there is barely anything (if anything) available for the same price spec wise.

are these designed so you can open them and change the SSDs & memory?

I have a dilemma...
I want a laptop to take with me for coding, photo editing etc. but when I'm at home I want a gaming machine, I won't really game on the go.
so... do I just get an all in 1 capable gaming laptop and plug it into my telly. or do I buy a cheapish laptop and just build a rig at home?

Well you could indeed build a very nice rig for around £700 for home and spend £300 on a laptop

It was £1099 on amazon a few days ago and didn't last long and has gone back to £1349 and doesn't keep changing at all.
