For infrastructure equipment:
Huawei has already provided their source code for examining but no country can find anything. The only point where you data might be monitored is by Lawful Interception (LI) which is mandatory in 3G/4G/5G by Third Generation Partnership Project (3GPP). That means all the equipment suppliers (Nokia, Ericsson, Huawei, ZTE and etc.) have to provide such "backdoor" to obtain the license of selling their products. At the end of this, only the local government can benefit from the data be collected regardless which company provide the devices.

For End users (Phones):
It is only matter if you are working as a key role in the government and your data is sensitive. For the rest, as you said it is a free market, it is up to yourself which company to have your data.

Well they're definitely almost wholly owned by the Chinese government... But so are many of the brands we like, such as Xiaomi, oppo, oneplus, etc. The singling out of Huawei is just kind of a symbolic move to make an example out of them. If you want to avoid the prying eyes of the Chinese it's a large list of companies to stick on the list, and even then it doesn't guarantee they won't buy your data from someone else.

Google are the worst for data mining. Apple go much further to protect their users, although wont be angels - and i'm a andriod user.
