For instance i7 930 spec sheet (pdf) states that the speeds supported are 1066mhz and below. Yet you can run 2000mhz plus.

Like you say though, it is good practice to check things like this out before you order.

bios upgrades do happen, that said its worth (if you can) check the spd timings on the manufactors website .. as many will sync down to the lower speeds and usually sync one higher than advertised ..

Yes. RAM will default to the highest common dominator that all the components support.
So it will run at 1,333 but the latency will be down to the SPD settings on BOTH chips unless manually set.

Well there's the official specs and then there's reality which often differs.
