I think it's just using LGs onscreen control software which is available for MacOS and Windows

For programming you tend to be reading long bits of text, so the best thing you can do cheaply is rotate a monitor into portrait position. Putting that aside though this should be fine as you get can get two 1280x1080 windows side by side.
Can you do PIP without the keyboard control? I’m guessing heavily that my work PC won’t let me install the software sadly!
Also, how well would this do both PS4 and a Linux machine at the same time? That’s probably my primary purpose
Is resolution good without rotating this to portrait? I have been thinking of using HDMI from my Macbook Pro to this monitor. Mainly I will put windows side by side.
I've got an Xbox One S so I'm guessing for that it will output at 16:9 and leave black bars either side. But wondering if that is just for games and if Xbox Apps like Sky output at 21:9?

I purchased on older model (same size, same resolution) make a huge difference to having two screens. If I need more screen space I just add another screen but for more of the time the ultra wide screen is perfect.

I actually enjoyed it so much purchased another for a second PC. I purchased around this price point, no regrets all.

My son borrowed one of mine for his PS4 and he said it had blacks bars on either side.

I use it as a PC monitor so always full screen, especially nice I'd playing 21:9 output for movies

For coding I'd go with the next size up 3440x1440 or use two monitors.

Personally I love this format for coding. I usually have 3 multiple horizontal splits in VS code or rider ide and just call up the browser via hotkey as needed.

No. Monitor tech doesn't really advance invisibly, changes always end up in the spec sheet e.g. Higher colour space coverage, higher refresh rate. It also advances more slowly than other tech, I'm still using a 27" 2560x1440 60Hz 99% sRGB IPS display from 2012 and while I could buy an equivalent today for £100 less than back then it's not obsolete.
Does the stand detach ? I am guessing would make quite a good screen for a virtual pinball machine.

Well now it's 4 years old it is prone to the odd tantrum, is at least potty trained and has an attitude when people ask if it is 4k.
