Or just ask the fishmonger on the counter to do it for you.
I sure hope this isn't a red herring...
I cook. Them whole in the microwave and I eat the guts , bones and roe and all apart from the head. Tasty!

Crap video. You'll never get the smell off the board, so do it on top of an old newspaper. It won't slide so much either. And the knife handling 0/10. Slap your hand onto the fish palm down and hold it firmly, then draw the knife along either side of the backbone towards you, head to tail of fish. Much safer. There's an easier way to fillet. After you've split the belly and removed the guts, slice from vent to tail up to the backbone. Then lay the fish flesh down and press along the ridge of the fish back to flatten it. You should then be able to pull out the backbone with the rest of the bones attached.

Or, you could get the fishmonger to do it or cook them on the none. Either's safer than that video.

Yes you are quite right you can choose from plenty of filleting vids it was only a basic one so you can watch the best one that suits you, the Morrisons near me is a fish counter only and the same as tesco and are not qualified fishmongers and the fish is already prepared before it reaches the shop , the reason they are selling them cheap is that you do the filleting yourself as they told me ,Fishmogers on the highstreet will fillet them if purchased from them

I love herrings,purchase all the stock every time.
