There are a few sources, if you look on the site, the first option is languages, and it only has one option, that being japanese. other games have multiple if they are multi-language
My understanding was once a game was tied to your account and you switch regions back to UK then you can download via the UK eShop so should be English which is the case for basically every other game. Might test it out and see for myself

People have tried this on Reddit and there is no way to play this in English if you buy the Japanese version unfortunately
Digital games can have regional releases. So If a game sees a release in Japan with only Japanese language support, and later is released in other countries with more language options, the original Japanese version will remain the same, unless it specifically gets updated with new language support.

Many games receive WW [worldwide] release, meaning there is 1 version of the game for all.
