Skylake has been replaced and Dell are upgrading this next month if they haven't already!

There's not much difference with Kirby Lake hence why Apple are skipping completely and moving straight into Cannonlake. Still a cold price for the specs.

​They haven't skipped it. they have gone for the previous generation. Cannonlake is 18 months away so kaby lake is the current generation and will be for a while.

The majority of Apple customers don't know/care exactly what's in their system and Apple know/exploit it. As long as it has an Apple logo that's all that matters.

If you look at the specs of a Macbook Pro it never states the model number of the cpu. All it will say is the frequency and family.

Plus they probably worked out a nice deal for old chips from Intel.

Kabylake is Intel's most dishonest 'generation' ever.
The core has remained the same (so the exact same IPC), the multiplier was raised a slight bit, the iGPU now has 4K support. and that's pretty much it. Supposedly, on mobile (possibly only 15W parts) the iGPU throttles less and stays longer at boost.
In previous years Intel would have called this a silicon stepping, or at least labeled it more honestly like with faster Haswell revisions.
