Kadai = Two Handled Wok?


Kadai is the name for this type of pan. It's the Indian (Punjabi or Hindi) word for it. Just like Wok is the Chinese name for ... well a Wok, pan design originating in Chinese (presuming). Wok is is used for* stir fry, Kadai is used for* Curry (in India and Indian households). *Saying that, you can use these for anything you like, if you own them. I've made omelette's and soups in my Work and Kadai, and made stir fry in a saucepan (good old student days). Likewise, most standard pans get referred to as Kadai's in Indian heritage households - when used for Curry. The number of hands is not the be all and end all.
