I was thinking the same thing. Slow cooking really benefits cheap meat cuts, not a quality cut like that. It would be sacreligious ! lol

And also ruins a beautiful bit of beef. Seal it and max an hour in the oven and then when you have eaten it, make beautiful stock with the bones.
Absolute waste to slow cook it.

you & most of the other posters are missing one of the most delicious ways to cook a decent joint of beef or lamb then

put seasoned meat in oven - no need to pre-heat - blast it with 220C for about 15 mins - allows oven to come up to temperature quickly - then reduce to 50C-60C for 4 or 5 hours - remove to settle for 20-30 mins (covered to keep warm) - then serve - it will be beautifully pink & juicy on the inside but with a decent thin crust on the outside

couldnt agree more with mazon (top of list), to slow cook this is sacrelige. If you follow his link it is the perfect cooking method. Will be medium in middle and more well done at ends for those who like it that way. We have one of these instead of turkey for christmas dinner, goes down a treat and is the original meat traditionally used at Christmas. Turkey is a modern replacement.

we get ours from a farm shop every Christmas,he hangs it for 3 weeks.
This year the price is £16 a kg

​you are correct, but I don't think this is the "slow roast" method most people would think of. this is the way Heston recommends

Maybe not, mine is a dual oven with the normal one starting at 100 and the fan oven starting at 70.

I've posted this deal a couple of times in the past.

Make sure you ask for the vacuum packs from the chiller and check the date on it.
If you don't need the whole thing, it's pretty easy to carve off some fat rib eye steaks to freeze

It won't come French trimmed like in the photo bit that's what I plan to do. With the off cuts I will be making a curry, beef stifado or good old stew and dumplings, making me hungry thinking about it!
