It's really easy. I did it for the first time when half shoulder was more expensive than full one and I have been able to remove it quite easily.
Just give it a try. After 5 hours cooking, nobody will notice if you did it well .. or not
If you are cooking Indian then cook with the bone. Do cut into smaller pieces though.

You can still get the 1.5kg NZ lamb joints from Tesco for £5.50 - cheaper per kg. Frozen but that's no problem.

Yeah thats what I do but shoulder was too big last time for my casserole, I had to divide it into 2 pieces with bones

good price on the fresh lamb, i cut it of the bone for my winter stews.
ref the frozen joints, i bought 4 last week and of all they had the biggest was 1.3kg so not as cheap as it seems.
they do the same scam with the turkeys (example) between 8.4kg to 10kg £10, but the very rarely have the heavier ones so the price per kg they show never or rarely applies and you often are only left with one a kilo lighter, thats over 2LB, makes me bloody fuming, i ask them to go get some big ones out and they either say thats all there is or go and get another 6 or so and there still are none within 0.2kg of the of the priced weight.

thats great, i wish i could do the same.
the point really is that they state ie:£5 per kilo when in fact most of them cost up to 15% or so more, it really **** me off when i see these deals with variable weights and theres none of the said weight, unless of course you get there early lol.

I definitely prefer shoulder to leg for my saag but leg is good as well
yes if cooking indian its so much better if you cook on the bone.

very good price fresh, tender, juicy lamb shoulder (my favourite part!).......but what I saw in-store today looked disgustingly untrimmed and fatty. not voting

Had another look at my fresh one in the fridge and it looks good, just the level of fat you'd expect
