After reading some things in the news recently and decided that I should get a dash cam.

This one seems a fantastic price for the features.

Anything over 1080p is overkill for a dash cam, I'd even say anything over 720p is overkill. Had my g1w for a while and the picture is clear as day.

Price isn't too bad but I wouldn't get sucked in to buying a 2k/4k camera.

I think for the price, it's a bargain.
Whilst I tend to agree about the quality, I also think the higher quality the better, especially as it may well be viewed by solicitors, insurance companies, police etc.

Also, I am going to see if I can mount it my bike. I see some stunning scenery when I go out. SO would love to have that captured at a good resolution.

Not true usually when you get a 2k or 4k camera you also get 1080p @ 60 frames per second which is what you need to be able to make out number plates clearly.
Very tempting
Ref the 2k is a waste I use to have a decent Transcend dash cam that was HD (1080), but changed it for a more discreet 2K dash cam just so I could leave it in the car and you can really notice the difference.

I must admit I am not one of the people that raves on about 4K on TV's, but with dash cam recordings you want them as sharp as possible as you want to be able to make out the numberplate clearly even at a distance.

For the price this is amazing, especially when you take into account the quality and wide viewing angle.
Remember to factor in the cost of a Sandisk High Endurance / Kingston Industrial or similer Micro SD Card. Normal micro cards are not suitable for continuous loop recording and fail, the last thing you need if its at the event of an accident! The combined package shown lower down in the Amazon listing shows the Sandisk Ultra micro SD card the worse culprit withfailing in Car cams!

1080p is 2K. 4K is approx 4000 horizontal pixels and 2K/1080p is approx 2000 horizontal.

1920x1080 is the consumer crop of cinema DCI 2K (2048×1080). 3840×2160 UHD is the consumer crop of cinema DCI 4K (4096 x 2160). 2560x1440 is not any "K" as it is not a crop of a cinema format.

Anybody know if the night vision recording is any good on this. ?

Worth remembering that higher resolution video does not necessarily mean better or clearer image quality.
Anyone know if these are actually worth having? Do car insurers actually offer cheaper insurance if you have one, or take dashcam footage into account if you're in an accident?

From the articles I have read, the footage (if clear enough) can be used as evidence.
