To cook food faster. So dried lentils and dried beans and tough cuts of meat etc.

By running at higher than atmospheric pressure, the water in the cooker (and steam) will exceed 100C. So the temperature difference between that and the food being cooked is greater and so it will cook faster. The greater the pressure - the higher the cooking temperature. The relationship is inverse exponential - so 15psi is about the most that pressure cookers go up to.

There is a danger present with some of them. At full pressure, the water and steam present inside may be at 120C. If you put it under a fast running cold tap - the top of the cooker can cool rapidly, condensing the steam faster than it can be created. That drops the pressure momentarily allowing the lid to be taken off. The water is still at 120C and will then instantly flash off into steam as the lid is removed. Extremely dangerous... Cooling them under a tap in this way is one of those Darwin Activities.
Well it just cooks under high pressure making it quicker and better leaving all the flavours inside .. by having one i can just say you don't need as many spices as usual thats how good flavour it gives so it makes it all a lot healthier. 😘
So this is a slow cooker on steroids? Wondering if I could cook a spag bol with it?
