Yeah, I had a Chinese version Mi Notebook Air - I factory reset it, bought a 2£ Windows 10 Pro Licence off eBay, installed it - everything worked fine without any issue.
Don't see why people complain so much about 'Chinese Version'....

Unless Windows proposes a region lock on it's activation, you shouldn't need to buy another copy of Windows. The machine technically will have a key saved to the machine so you should be free to simply re-install Windows using a English Windows image without re-buying. It WILL ask you for a licence key but you can skip this and Windows will activate as normal.
Yeah, as that might be true for some - for mine it did not work - even though I did exactly as you said. Really depends - but you can find licenses very easily now; and let' say 5£ for a license is not that much.
It's perfectly legit for personal use. I believe the things stand quite differently when it come to enterprises.
Yeah, I used the Windows Media Creation tool from Microsoft website and it worked flawlessly. If you Google the name of it, on the page you will also find a guide.
Yeah, all Xiaomi laptops come with QWERTY US keyboard - something I do not find odd, even though I have got used to the UK layout after using the US layout for 12 years.

I REALLY want to overlook that and buy a couple of laptops for the kids as they've got some great prices on top CPUs with SSD and even a Geforce 940 for example but the warranty thing just puts me off

Your best best is looking for something around the UK - in case they breakdown you will want to get a replacement quickly.
