To remove a good proportion of road vibration that transmits through the bars therefore less fatigue for the rider

Where does this plug into my computer? Have even the moderators left since the disastrous update?

But one of their qualities is 'stiffness', and stiff things transfer more vibrations than flexible things, do they not?

You`re getting roasted because it`s listed in the Computers/Gaming category.
BTW 44cm might be too wide for most people, from my experience as a bicycle mechanic working with bike fitters in about 80-90% of the cases the average male rider needs a 42cm wide road handlebar.

Genuine question from someone that has never done road cycling, why would 2cm make such a large difference?

I get though that in a lot of areas, such a seemingly insignificant difference can make a large difference.

Getting the perfect geometry can prevent injuries, it`ll minimize stress on your joints, will make your ride more comfortable and brings your power output to the optimum level. In the end you will be able to ride faster, longer and not get tired so much so basically you`ll enjoy the ride more. Even moving the saddle 5mm further back or lowering your stem by 5mm can make a significant difference and your back/knee/wrist pain will be gone.
It`s like getting a suit: you can get 1 size bigger and it`ll still be OK or you can get the right size which will be significantly more comfortable. And then you can get a bespoke tailored suit which will feel perfect and you`ll enjoy every minute wearing it.

Depends entirely on your shoulder width, I use a 44, but should use a 46, and I'm pretty average build.

Depends where the stiffness is concentrated. Carbon can be manufactured to allow flex where it is needed. I use carbon bars now solely for comfort, aluminium bars are much stiffer than carbon ones. When in the drops my carbon bars flex, the aluminising ones don't move,
