We switched to starling bank last year, and have found it to be great but we have just had the first problem that I can't find a solution for.
We were looking at buying a second hand car, we've seen one being sold privately but to buy it we would need to withdraw several thousand pounds.
I can withdraw £300 a day from ATM or post office.
How have others done this?

That doesn't sound right, I think you'll find its up to six withdrawals per day, with a daily limit of £300 in total.
Not to scare you off, but there was a time when someone was asked to pay for a motorbike cash and the person agreed; when went to collect it, he was robbed on the way near where the sale supposed to happen. The police found out after investigation that the robbers and the sellers are all in it...
Just prepare for the form filling and having to justify to the bank why you are taking out so much cash, even though it is your own money. (edited)

Was it not hsbc that got huge fines over money laundering? Possibly now beeing over careful as a result?
Although I think all banks+retailers are obliged to check why you need the cash. Combination of money laundering, mules and scams.
That’s interesting, in the past couple of months I’ve moved much larger amounts without any issues.
From multiple bank accounts, one was first direct ( sister company of HSBC ).
No you can't - you can withdraw up to £300 a day in a max of 6 withdrawals eg. £100, £100, £50, £20, £20, £10
