Beef Wellington

I have a bit of topside beef and want to try something different. Any suggestions on using it to make a beef wellington? I'm assuming cooking times/method would be different compared to fillet.

In all seriousness last time I did it beef wellington (I've done it twice from an old family recipe) I roasted about 2 pounds of topside on 200 degrees for 1/2 hour then cooled it for an hour, before adding all the stuffing/pastry and finishing.
buy some jus roll puff pastry, there is a recipe for beef Wellington on the back. also try Ramsay's recipe if you can find it.
Why waste a good joint by putting pastry on it? Do a beef unwellington,its only popular on come dine with me. Its like a joint and chips.downmarket.enjoy xmas

not really the same at all. and clearly you never tried it.
Thanks for all the help. I decided to keep it simple so just did a roast. I'll leave the experimental cooking for a quieter day. Hope you all have a Merry Christmas!
if you were to do a topside wellington id slow roast it prior to putting in pastry with pate, as you said fillet cooks much quicker and only really needs sealing.

Espirit77 have tried I'm a chef,just making the point beefweli is pop culture now,on shows like come dine... Unless your want to try fashion food like very rare cooked meat in pastry.then why not have the beef joint on its own,with seasonal veg.

The food on come dine is hardly fashion food... more like amateur cook food. Beef wellimgton has been an english classic for decades. But youre a chef so you know. A roast doesnt have puff pastry porcini mushrooms or prosciuotto so you cant really say one is better, totally different dishes
