Buying a phone from geekbuying - credit card or PayPal?

Using a credit card works out a few quid cheaper but which offers the most protection?.

It's from the Spanish warehouse so no customs to pay. Just a matter of which payment method

And not via Paypal as this negates the S75 protection Patonar is (presumably) referring to.

S75 does not discriminate location. As long as the other S75 qualifying criteria is met, merchant location is irrelevant.
If the phone itself is over £100: direct payment to merchant via credit card is preferable if at all possible as the UK-based credit provider is obliged via S75 CCA to replicate whatever delivery & warranty obligations are offered by the merchant. Otherwise a purchase via PayPal may offer 6months of whatever protection PayPal deems fit.
