I recently listed an item for sale on ebay, but have decided to sell something else, will the £1 final value fee offer remain if the listing changed to another item from what was originally listed?

you'll lose the offer .. but if it's something that will sell for a lot (heavy FVF) then just give it a week and sell it on the next offer period?
Yes, you can amend your listing including category, no problems.

You can change the listing, however some categories are excluded for the 1fvf offer, so make sure you don’t swap it to one of those
