What dates/airports/how many people?

Liverpool/Manchester, last week in July for 14 nights, 2 adults and 2 children. Thank you
Look online or go to a travel agent the day before you plan on going.

I've tried telling that to the wife but she can't cope with it being that last minute
I'm afraid to say no easy answer, it's all called your own bull work. Firstly since it peak season the major operators not forgetting Jet2Holidays and Easyjet Holidays, then try OntheBeach (like the search engine), then compare OTB's prices against AlphaRooms and Travel Republic. Now few things I've noticed lately (well with them all always go through to last page as if you booking), but TUI can sometimes default to 15kg luggage and it used to be 20kg, Jet2 is 22kg luggage, Thomascook will be 15kg default, Easyjetholidays you must go through to final page, with all the third party AR,OTB,TR you must go through to final pages. Good luck!.
