...i have a 3 mobile phone at the moment, but i am getting a nice new phone for christmas, which isn't on 3 network, but it is unlocked. Would i still be able to use my 3 chip in it?

You will be able to use your '3' sim, but it will be through 'Orange' I believe.

You will then get '3' contacting you to tell you to put the sim in a 3g enabled phone.

Unlocked phones will rarely be unlocked to '3'.

Would 3 block my sim, if i refused to put it in a 3g phone? Also, would i get the same services in a non 3g phone?

That I don't know, I guess they would suspend your service.

Video calling (Who uses that?) is the only service that I know you would lose.

Best bet is to get a 3g enabled phone.
The Mobile phones forum on MSE is a better place to get your answers, I have only a basic knowledge of this (To be honest, I only have basic knowledge of most things).
