Flight cancellation, how much notice?

Flying out late next week.

Flying with KLM to the USA and will be taking a few persishable goods.

Not buying perishable goods till day before I fly out.

Thing is with all these flight cancellations are they all last minute or are we told in advance?

Don't want to waste time, money and foodstuff that's all.
