How much (or little) do you want to spend? There aren't that many places that are central and affordable (mostly expensive hotels in ancient buildings).
So the Holiday Inn is right out on the ring road, Holiday Inn Express is at the football stadium. You could try the Royal Oxford Hotel - in the centre and around £100 per room per night. Remont is on the Banbury road, so a long walk or short bus ride in to town. It's quite a boutique hotel and it also around £100.
If you want to pay less than this then you're looking at either a B&B or the Youth Hostel, which is right by the train station and is very modern.
By far the cheapest place to stay, if you know anyone with university collections, is in one of the colleges. Rooms are basic but you'll probably be very central (not all colleges are in the centre) and have the bathrooms to yourself, as it will be before the start of term.
