Help choosing graphics card please

Hi, I am building a new PC, I have bought the following so far:

core i7 960 3.2Ghz
CoolIT ECO cpu cooler
6GB Patriot Viper 1600MHz(3x2GB triple channel)
ASUS Rampage III GENE mobo
CoolMaster Storm Scout + Coolermaster Silent Pro 700W Modular PSU
OCZ 60GB Vertex 2E SSD

I am now just saving up to get a graphics card.

I was hoping someone could advise me on the best card to get for my money. I was also curious on whether it would be better getting 2 medium price cards and putting them into sli/crossfire or just one high price card?

My Budget is probably £300 max.

Good set of components you have there. Should make a lightening fast machine. In terms of graphics cards: It depends on the screen resolution you intend running at and which games you will be playing. Have a look at Toms Hardware and specifically their graphics charts. Identify a card or cards which will deliver playable frame rates for your chosen resolution and buy the cheapest ones which will achieve it. In 12 months time, sell the card(s) on ebay and upgrade using the same technique. Never buy the latest and greatest card - games won't have caught up yet and so you will pay through the nose and get no benefit.

High end card I would say, maybe a 5870
