Help: Need help making it moist.

Hi All,

Need help.. im cooking Pork belly chops (yum) however when ever i cook pork chops or belly strips they always go dry and horrible.

I cook them on a low heat (using gas) for around 20mins or so they look alright, both side go brown etc however there always dry.

are there any cook gods out there that can help me make them moist?

I use my George cook about 10 minutes then spoon apple sauce on top of each one and cover with cheese then put under grill until cheese melts. delicious!!!!

soak them in water is what i do with chinese or BBQ flavouring, i buy sachets from chinese supermarket

To be honest after reading the inital title this thread is a bit of a let down. Are you just trying to tease us?

i cook bork belly all the ime
served with mash pakchoi and a spicy plum sauce
score the belly rub salt in.
put in roasting tin half immerse with water and slowly roast it

tempted to go the water route..

put them in a dish and cover with apple juice and a couple of layers of foil, cook them in the oven on a low temp about 120 C FOR ABOUT 1.5 HOURS :thumbsup:

I tend to cook large joints rather than strips, however....

I blanch it it boiling water for 3-4mins, then pat dry, put in a roasting tray, half cover with stock/orange juice/star anise or whatever i am using, tight fitting lid on (with foil too) 160 deg for about 2 hours.

Melt in your mouth!!

cook them in water 1st then hot frying pan to brown off

Mix chinese 5 spice, ginger, soy, honey, ketchup, sherry, hoisin and spoon over and roast in oven. Will come out like spare ribs if you let it cook long enough.

put bacon on the top of them !

seriously google belly pork and cider. We have belly pork a lot, not chops but a joint and we always use a can of cider when cooking and it is the best belly pork I have ever had
