    Idiot's guide to BBQing?

    Not much of a BBQer myself, anyone got any tips?

    I've got a gas BBQ with a bit of lava rock. Don't know whether I should have the gas on full or half or low? How much lava rock should I have on it, enough to cover it? Should I be aiming for flames hitting the food or is that time to move things out of the way?

    just a single layer of lava rocks over the cooking area,
    If doing kebabs with wooden skewers soak the skewers in water overnight.
    Flames high to start then you can turn them down a bit once lava is hot
    When done turn rocks over and leave flames on high for 10 minutes to burn food deposits off them.
    During cooking you may get flames leaping up from grease dripping out the food, dont worry this just makes you look more manly if you carry on as normal,
    Use seperate tongs for raw and cooked food.
    Always keep a ice cold bottle of beer by your side as the heat makes you thirsty.

    DO NOT LET ANY FEMALES NEAR THE BBQ PROCESS AS ITS MANS WORK THEY MAY OFFER ADVICE IF SO DO THE OPPOSITE AS THEY KNOW NOTHING ABOUT COOKING WITH FIRE!!!

    you dont want flames anywhere near the food, thats how it all gets charred

    You probably need oil on the food?

    TIP:
    To stop food sticking to the grill brush it lightly with cooking oil before you start.

    Wooden skewers burn pretty easily but if they are soaked it takes a lot longer for the wood to dry out enough to burn. To stop the meat sticking you just need to make sure its got an oily marinade and turn it regularly - but as harlzter says... :giggle:

    And get a proper BBQ cleaning brush (about a quid from wilko's tesco's etc) they are brass wire brushes and have a special curved blade for cleaning the grill slats and a scraper for the flame spreader plate.

    It's a known fact that men make the best chefs in the world....I've personally experienced some women even under cooking pasta. :giggle:

    I prefer to pre-cook chicken thighs/wings/drumsticks in the oven so they are nearly cooked and then finish them on the bbq

    no risk of overcooking / undercooking then

    lot cheaper too as mains gas is a hell of a lot cheaper than bottled.

    What gets me is the "deposit" you have to pay, yet for the 19KG bottle you dont??? WTF is that about? We pay £18 for the 19KG bottles which should last a fair while!!

    Damn thats cheap. £48 from Calor if you have no exchange bottle. Although I know a localish garage that will just give you a full bottle for £18, no deposit.

    You can't get a refund without the paperwork. Empties sell quite well on ebay though ;-)
