Is January a good time to book summer holiday?

Hubby is desperate to book our summer holiday. 2 Adults 3 Kids 15, 12 & 7. Flying from Cardiff, Manchester or Birmingham. Anytime in school Summer hols, ideally with a water park or one close by. Not too fussed where but ideally not Spain (been there a few times). I personally wanted to go to America but feel its too expensive. Budget up to £3K(that would have to be something special) but ideally less.
Anyone know of any good deals and is January a good time to book? With us being a family of 5 i dont want to leave it until the last minute.

ive found last minute is usually better deals. though not sure about summer holidays....
i always book flights on sale (often the earlier the better), and hotel plus all extras literally day or two before when theyre selling unfilled rooms out.
never ever bought a package deal in my life, as think they are way too overpriced, but i suppose everyone has favorite methods.
3k for 5 doesn't seem a lot (specially in most expensive time). I suppose what you want, what catering, how long for etc...

Last minute aren't what they used to be. We booked our florida holiday in august once the flights had been released. Personally find this is the best time to book while they are low and book it independent, this also save alot of cash! I would try price it online doing it yourself and then compare to what the travel agent will quote. remember some will price match a deal if not beat it

Thomas cook and thomsons do discounts in jan. best thing to do is go into the travel agent tell them what you want and say you have a budget , I went to Thomas cook a few years ago and said I want the following for my wife and I, my 21 and 15 y/o boys.
two weeks all inclusive, hotel on the beach, far away shores, 2 rooms, in flight meals, transfers, etc and told them I had a price written down on a piece of paper. I wanted Cuba as my first choice of destination. in summer holidays.
they started of at just under £5,000. then they looked at playing around with rooms , by paying full price instead of child price for our15y/o and giving us some discount they got it down to around £4,400. with a bit of phoning around got it down a bit more then finely spoke to the manager and got it down to £4,005. .. I had £4,000 on my piece of paper so that was fine. we looked online when we got back and it was nearly £4,500 so shows you CAN beat internet prices. .... shows you can haggle , give it a go .
hope you get a good deal, have a nice holiday. PS Turkey and Greece are nice. Tunisia ( port el kantoui ) is also good but not as friendly when it comes to females.

Kos is great for the history of Greece with lots of ruins, I stayed in Kos town, also hired a car for a couple of days and it was easy to drive around the island to different beaches.
Corfu was good for its beaches, but a bit livelier nightlife
Cyprus was lovely, great beaches, but very hot in august. some good shopping in Nicosia. also hired a car here and they drive on same side as uk. some great quality hotels in Penera beach resort. ( think that's how you spell it )
