    i've got this nice big breast..

    its a duck breast. would it be ok if i took the skin off while i fried it or would it dry out too much u think??

    na, leave skin on, seal it in hot hot oil, couple mins each side, then put in oven for about 20 ... chop up some veg, roast and you have nice meal. complete with a jui, using the duck juices
