Japanese Knives

Thinking of getting one for xmas, anyone know much about these, which is the best, and where i can buy from (preferably not more than £60).

Did a little reading, i think i would want the Santoku type of knife as it says those are for fish, meat and veg.

    Very sharp multilayers of steel.

Attractive to look at, but need to take proper care of them.

Use a different cutting style from eg Sabatier knives.

    Not for everyone.

Best of luck trying to find a good one within your budget.

for anyone else that might want these, i found Russums and Nisbets both sell a good selection.
