quaint towns / cities to visit for overnight trip from london?

think title says it all! any recommendations? was thinking canterbury or something but would love some recommendations!

ideally the type of town you can walk around in during the day, seeing cute markets or quaint stores, but still have fun at night at some nice pubs and get some awesome food?
