ryanair help needed please

hi guys I was wondering if you could help me
i'm looking to book a ryain air return flight for the family but have a few questions that i can't seem to see the answers to in their terms and conditions
our daughter will be 1 - it's cheaper to book a childs place instead of an infant and therefore we get a seat of her own (she will still be on my wifes lap for take off and landing etc ) and she gets a hand baggage allowance is this allowed?
we are only planning on booking 1 bag into the hold with myself and my wife doing online check-in for her and thekids but it says that infants cannot do the online check-in but if my daughter can be booked as a child will she still not be able to check in online?
also can my wife book with 2 children or is there some rule that each child must have a seperate adult accompaning them?
    many thanks in advance

Cant help with the rest of it, but usually the child to adult ratio depends on the age of the kids and whether they need to be on your knee for take off and landing
